INGREDIENTS
- 4-5 tomatoes, quartered - any kind will do
- 1/2 sweet onion (mine was huge so I only used 1/4)
- 2 jalapeños, halved with seeds and ribs
- 3-4 garlic cloves
- 1/2 bunch of cilantro
- 2 Tbsp cumin
- 1 Tbsp Mexican oregano
- Juice of 1 lime
- salt, pepper to taste
INSTRUCTIONS
- Put the tomatoes, onions, and jalapeños in your YS640S at 200-25° and let them smoke for at least 30 min.
- Remove and let cool slightly.
- Add all of the ingredients to a blender and blend using short pulses to get a salsa with texture. (Let er’ rip if you want yours more liquidy.)
- Taste and adjust seasonings to your liking. Enjoy!
*Optional: If you want it really smokey, drop your temperature to 170-200° but don’t smoke much longer than 45min.
Note: This will keep in your fridge for 5 days if you use a container with a tight fitting lid.
